2 cups herb stuffing mix

1 cup grated Parmesan cheese a kind of cheese of a rich flavor, though from skimmed milk, made in Parma, Italy.

6 eggs, beaten

3/4 cup (1 1/2 sticks) butter OR margarine, softened

1/2 teaspoon salt

1/4 teaspoon pepper

Cook broccoli according to according to
prep.

BEEF FAJITAS

2 tablespoons vegetable oil

1 medium onion, sliced

1 pound beef sirloin strips (for stir fry)

2 zucchini, cut into matchsticks

1 cup green OR red bell pepper strips

1/2 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon pepper

1/3 cup barbecue sauce (Masterpiece Original preferred)

1/2 cup shredded Cheddar cheese

1/4 cup sour cream

8 (6-inch) flour tortillas

Heat oil in large skillet. Add onion and cook 5 minutes. Add beef and stir-fry 3 to 4 minutes until rare to medium rare. Add zucchini, pepper strips, chili powder, salt and pepper

. Cook 2 minutes. Add sauce and heat through. Serve with shredded cheese, sour cream and warmed tortillas. Makes 4 servings.

I'd like to prepare the wonderful mashed potatoes like those served at the Cheesecake Factory in Woodland Hills at home. They use red potatoes with some of the skin left on and have yummy garlic flavor. I'm not sure what else they contain. Can anyone help?
