Several readers sent along versions of the first recipe with cake mix with varying amounts of sugar and eggs. CAKE ROLL CAPRI (Shared by Pat Rosenthal, West Hills) 4 eggs 1/2 teaspoon salt 3/4 cup pancake mix 3/4 cup granulated sugar 1/2 teaspoon almond flavoring Powdered sugar Filling Combine eggs and salt; beat until thick and lemon-colored. Add pancake mix and granulated sugar, a little at a time, beating after each addition until smooth. Grease a 10x13x1-inch jelly roll pan. Line with waxed paper, grease again. Spread batter evenly in pan. Bake in preheated 400-degree oven 10 to 12 minutes. Sprinkle dry towel generously with powdered sugar. As soon as cake is done, loosen edges and turn out on towel.
