COOK'S CORNER AMERICAN CLASSIC STICKS TO BASICS.

Shirley Freitas of Canoga Park has been seeking a recipe for tuna casserole with potato chips and cream of mushroom soup. This is an old American classic that has been printed many times in many newspapers and magazines during the last 50 years.

Six readers sent in the same lengthy recipe, while two readers shared similar shorter versions, which came from Campbell's Soup.

Sandy Williams' sent along a version that was shared in a 1983 Daily News Food section by Jan Stoll of North Hollywood. It uses cream of celery soup.

This hearty casserole will make a comforting meal during the winter season.

TUNA CASSEROLE

1 (10 3/4-ounce) can cream of celery soup OR cream of mushroom soup

1/2 cup milk

1 (6 1/2- OR 7-ounce) can tuna, drained and flaked

1 cup cooked green peas

1 1/4 cups lightly crumbled potato chips

In a bowl, blend soup and milk. Stir in tuna, peas and 1 cup potato chips. Turn into a 1-quart casserole. Sprinkle top with remaining 1/4 cup potato chips.

Bake in preheated 350-degree oven 25 minutes. Makes 4 servings.

1 (10 3/4-ounce) can cream of mushroom soup

3/4 cup milk

1/2 cup mayonnaise

2 (7-ounce) cans solid white tuna White tuna is a term that may apply to two different species eaten in Japanese cuisine :
  • Albacore tuna, Thunnus alalunga - the pale-fleshed tuna favoured by the canning industry, also known as shiro maguro, bin-naga maguro, or
, packed in water, drained

1 (10-ounce) package frozen peas, thawed

6 stalks celery, thinly sliced (about 2 cups)

2 hard-cooked eggs, halved lengthwise length·wise

1/2 cup drained sliced ripe olives

1/2 cup crushed potato chips

2 tablespoons butter, melted

1/3 cup shredded Cheddar cheese OR grated Parmesan cheese a kind of cheese of a rich flavor, though from skimmed milk, made in Parma, Italy.

2 tablespoons chopped parsley

In a bowl, mix soup, milk and mayonnaise. Flake tuna into pieces and fold into soup mixture along with peas, celery, eggs and olives.

Turn into a greased 2-quart casserole. Top with potato chips, drizzle with butter and sprinkle with cheese.

Bake in preheated 375-degree oven, 20 to 25 minutes, until top is browned and bubbly. Garnish with parsley before serving. Makes 6 servings.
