Some are even punching up the flavor by adding a little turkey sausage. For those, including Arkin, interested in recipes using only ground turkey breast, feel free to substitute for other types of ground turkey specified in recipes. Gean n. 1. (Bot.) Landy noted that she has been using the recipe she sent along for more than 20 years. Although it originally called for ground beef, Landy has been making it with turkey and likes it much better. MY MEATLOAF (Shared by Gean Landy, Chatsworth) 2 pounds lean ground turkey 1/2 cup bread crumbs OR cracker crumbs Noun 1. cracker crumbs - crumbs of crackers used especially for coating or thickening crumb - small piece of e.g. bread or cake 1 envelope (1.8 ounces) leek soup Leek soup is a kind of soup that is made out of salt, water and leeks. Because of its inexpensive cost it is often used in soup kitchens. It is often made with wild leeks. It is often considered to be a Welsh national dish. mix (Knorr brand) 1/2 teaspoon dry mustard Noun 1. dry mustard - a substance such that one to three tablespoons dissolved in a glass of warm water is a homemade emetic powdered mustard emetic, nauseant, vomitive, vomit - a medicine that induces nausea and vomiting 1 to 2 teaspoons salt 1/8 teaspoon pepper 1 1/4 cups low-fat cottage cheese cottage cheese a soft, uncured cheese made from soured skim milk; most of the lactose is removed with the whey. Used in low-residue diets for dogs and cats. 1/2 cup low-fat milk Noun 1. low-fat milk - milk from which some of the cream has been removed milk - a white nutritious liquid secreted by mammals and used as food by human beings 2 eggs Mix together turkey, bread crumbs, dry soup mix, mustard, salt and pepper
Spoon into a greased 9x5x3-inch loaf pan; pat in firmly. Bake in preheated 350-degree oven 1 1/2 hours or until done. Makes 1 loaf. TURKEY MEATLOAF (Shared by Sandra Case, Palmdale) 2 pounds ground turkey breast 1 1/2 cups fresh bread crumbs 1/2 cup chopped green onions 1/2 cup chopped red bell pepper 1/2 cup tomato sauce 1 can (6 ounces) tomato paste 2 eggs, beaten OR 1/2 cup egg substitute 1/4 cup chopped fresh parsley 2 teaspoons ground sage 1 teaspoon salt 1/2 teaspoon pepper 1 tablespoon lemon juice 2 cloves garlic, minced Mix together all ingredients until well blended. Shape into a loaf in a greased baking pan with sides. Bake in preheated 350-degree oven 55 to 65 minutes or until done. Makes 1 turkey loaf. GARDEN TURKEY LOAF (Shared by Patricia Dotson, Oxnard) 2 pounds ground turkey 3/4 cup rolled oats oats, cereal plants of the genus Avena of the family Gramineae (grass family). Most species are annuals of moist temperate regions. The early history of oats is obscure, but domestication is considered to be recent compared to that of the other OR bread crumbs 1 can (8 ounces) tomato sauce 1/2 cup shredded broccoli stems 1 small carrot, shredded 1/2 green bell pepper, finely chopped 1 small onion, finely chopped 2 eggs, lightly beaten Salt and pepper to taste Ground rosemary, sage and marjoram marjoram or sweet marjoram (mär`jərəm), Old World perennial aromatic herb (Marjorana hortensis) of the family Labiatae (mint family), cultivated in gardens for flavoring. (use any OR all) 1/2 cup dried cranberries (optional) Mix together all ingredients until blended. Press into a loaf pan. Bake in preheated 350-degree oven 50 to 60 minutes OR until done. Makes 1 turkey loaf. ITALIAN STYLE TURKEY LOAF (Shared by Ruth Nebron, Van Nuys) 1 pound ground turkey 1 pound ground Italian-style turkey sausage 1 onion, chopped 3 cloves garlic, chopped 1 green bell pepper, chopped 1 can (28 ounces) Italian plum tomatoes, drained and mashed up 1 teaspoon fennel fennel, common name for several perennial herbs, genus Foeniculum vulgare of the family Umbelliferae (parsley family), related to dill. The strawlike foliage and the seeds are licorice-scented and are used (especially in Italian cooking) for flavoring. seeds 1 teaspoon ground thyme 1 egg, beaten Enough bread crumbs to bind meat mixture (about 1/2 to 3/4 cup) Mix together all ingredients until well mixed. Place in loaf pan, smoothing top. Bake in preheated 350-degree oven 1 hour or until done. Makes 1 turkey loaf. TURKEY MEATLOAF (Shared by Sue Kent, West Hills) 1 to 1 1/2 pounds ground turkey breast 1/2 to 3/4 cup unseasoned bread crumbs 1 to 2 tablespoons Worcestershire sauce 3 to 4 tablespoons Dijon mustard Barbecue sauce Mix together all ingredients except barbecue sauce. Place in a loaf pan or hand form into a loaf in a baking pan. Cover lightly with barbecue sauce to glaze. Bake in preheated 350-degree oven 1 hour and 15 minutes or until done. Makes 1 turkey loaf. TURKEY DILL MEATBALLS (Shared by Vickie Geiger, Westlake Village) 1 large onion, chopped Margarine OR butter 2 pounds ground turkey breast 2 cups fresh bread crumbs (4 slices bread) 1 envelope OR cube beef bouillon Bouillon, town (1991 pop. 5,468), Luxembourg prov., SE Belgium, in the Ardennes on the Semois River, near the French border. It is a small manufacturing and tourist center. Pepper to taste 1 large egg OR equivalent egg substitute Milk Fresh dill OR dried dill weed 1 can (13 3/4 to 14 1/2 ounces) chicken broth Noun 1. chicken broth - a stock made with chicken chicken stock broth, stock - liquid in which meat and vegetables are simmered; used as a basis for e.g. soups or sauces; "she made gravy with a base of beef stock" 1/3 cup flour Cooked rice (optional) Saute onion in 1 tablespoon hot margarine until tender. Combine cooked onion, turkey, bread crumbs, bouillon, pepper, egg, 1/4 cup milk and 1 teaspoon fresh or dried dill. Mix well. Shape into meatballs. In 1 tablespoon hot margarine, brown meatballs. Remove to bowl. In a small bowl, mix chicken broth and flour until smooth. Pour into a skillet, bring to a boil and stir to loosen brown bits from bottom of skillet. Gradually stir in 2 1/4 cups milk until blended. Return meatballs to skillet and bring to a boil. Simmer until meatballs are cooked through. Before serving, mix in another 1 tablespoon chopped fresh OR dried dill. Serve with rice. NOTE: Meatballs also can be made very small and kept hot in a chafing chafe v. chafed, chaf·ing, chafes v.tr. 1. To wear away or irritate by rubbing. 2. To annoy; vex. 3. To warm by rubbing, as with the hands. v.intr. dish for a buffet or as an appetizer. BBQ BBQ barbecue TURKEY MEATLOAF (Shared by Joni Schaper, Lancaster) 1 cup cracker crumbs 1 cup barbecue potato chip crumbs 1 cup shredded mozzarella moz·za·rel·la n. A mild white Italian cheese that has a rubbery texture and is often eaten melted, as on pizza. [Italian, diminutive of mozza, a cut, mozzarella, from mozzare, cheese 1 onion, finely chopped 2 1/2 pounds ground turkey 1 egg 1/3 cup ketchup 1/4 cup barbecue sauce 1 tablespoon mustard Salt and pepper to taste Combine cracker crumbs, potato chip crumbs and cheese in a large mixing bowl. Add onion and turkey. Mix well. Add egg, ketchup, barbecue sauce and mustard. Season with salt and pepper. Mix thoroughly. Press into a glass loaf dish. Place loaf dish in a larger baking pan and add water to outer baking pan to come 1/2 way up sides of loaf dish. Bake in preheated 350-degree oven 1 hour or until done. Makes 6 servings. BAKED TURKEY BALLS WITH CABBAGE AND CRANBERRIES (Shared by Ruth Nebron, Van Nuys) CABBAGE: 2 pounds cabbage TURKEY BALLS: 3 pounds ground turkey 2 eggs OR equivalent egg substitute 1 cup bread crumbs 1 medium onion, minced 1/2 green bell pepper, minced 2 teaspoons prepared mustard 1/2 teaspoon garlic powder 1/4 teaspoon black pepper black pepper or pepper Perennial, woody climbing vine (Piper nigrum) of the family Piperaceae, native to India; also, the hotly pungent spice made from its berries. SAUCE: 1 jar (10 ounces) chili sauce 2/3 cup water 1 can (16 ounces) whole berry cranberry sauce 1 can (8 ounces) tomato sauce (no salt) Place shredded cabbage over bottom of a large roasting pan. Combine all turkey ball ingredients, mixing well. Shape into 36 small balls. Place over cabbage. Pour chili sauce over top evenly. Put water into chili sauce jar, shake and pour over. Spread cranberry sauce over all, then tomato sauce. Cover pan with foil. Bake in preheated 350-degree oven 1 1/2 to 2 hours, until cabbage is tender. Makes 12 servings. Can you help?
