COOK'S CORNER : MUFFIN RECIPE MADE FOR FANS OF HIGH FIBER.

In response to Trudy Wheller's request for a bran muffin Noun 1. bran muffin - muffin containing bran
muffin, gem - a sweet quick bread baked in a cup-shaped pan
, Hazel Forsell sent along a recipe that originally came from Moores Flour Mill.

Hope this recipe helps.

HIGH FIBER BRAN MUFFINS

1 cup bran

1 1/2 cups whole-wheat flour

1/2 cup raisins

1 teaspoon baking powder

1 teaspoon baking soda baking soda: see sodium bicarbonate.  

3/4 cup milk

1/2 cup honey OR molasses molasses, sugar byproduct, the brownish liquid residue left after heat crystallization of sucrose (commercial sugar) in the process of refining. Molasses contains chiefly the uncrystallizable sugars as well as some remnant sucrose.  

2 tablespoons vegetable oil

1 egg, beaten

In a bowl, stir together bran, whole-wheat flour, raisins, baking powder and baking soda. Set aside.

In another bowl, blend milk, honey, oil and egg. Add to dry ingredients. Stir just until blended.

Spoon into greased muffin tins.

Bake in preheated 400-degree oven about 25 minutes or until muffins pull away from sides of cups. Makes 12 muffins.

 and pasta. Eminian is in luck. Jan Silverman shares her recipe for Pasta With Grilled Peppers and Italian Sausage. (The dressing contains no oil).

This dish would make a great luncheon or dinner entree.

PASTA WITH GRILLED PEPPERS AND ITALIAN SAUSAGE

(Shared by Jan Silverman, Newhall)

1 pound ziti OR penne pasta

1 pound Italian sausage

1 large red onion, quartered

3 bell peppers (1 EACH red, green and yellow), quartered

2 tablespoons Dijon mustard

2 teaspoons fresh OR 1 teaspoon dried oregano oregano (ərĕg`ənō), name for several herbs used for flavoring food. A plant of the family Labiatae (mint family), Origanum vulgare,  

1/4 cup balsamic vinegar

1 head roasted garlic (to roast garlic, wrap whole head in foil and bake in preheated 350-degree oven about 1 hour)

Cook pasta according to according to
prep.
1. As stated or indicated by; on the authority of: according to historians.

2. In keeping with: according to instructions.

 package directions. Drain well and place pasta in a large bowl.

Grill sausage and vegetables on preheated barbecue, then cut into bite-size pieces. Add to cooked pasta.

For dressing, in a bowl mix together mustard, oregano and vinegar. Squeeze garlic cloves into mixture and mix well. Pour over pasta mixture. Serve immediately. Makes 4 servings.

Does anyone have a recipe for finger-shaped cookies called cinnamon sticks similar to the ones sold in the pastry section at the bake shop in Gelson's Market in Encino? The cookies are buttery, crunchy and twisted.
