COOK'S CORNER : MILK MADE SHORT, SWEET.

When Virginia Dixon of Sherman Oaks requested a recipe for homemade sweetened sweet·en  
v. sweet·ened, sweet·en·ing, sweet·ens

v.tr.
1. To make sweet or sweeter by adding sugar, honey, saccharin, or another sweet substance.

2. To make more pleasant or agreeable.
 condensed milk, we dug out some of the recipes we featured here a few years back. According to ``The New Doubleday Cookbook'' by Jean Anderson and Elaine Hanna, Doubleday, ``Sweetened condensed milk is a sticky-sweet evaporated blend of whole milk and sugar, usually used to sweeten sweet·en  
v. sweet·ened, sweet·en·ing, sweet·ens

1. To make sweet or sweeter by adding sugar, honey, saccharin, or another sweet substance.

2. To make more pleasant or agreeable.

``The Fanny Farmer Cookbook'' by Marion Cunningham, Knopf, reports that ``sweetened condensed milk is made by evaporating half the water from whole milk and adding enough cane or corn sugar corn sugar

The homemade sweetened condensed milk versions shared by several readers over the years are made by pureeing powdered milk, water, sugar and sometimes butter or margarine together.

SWEETENED CONDENSED MILK

1 cup plus 2 tablespoons instant powdered milk

1/2 cup warm water

3 cups sugar

Combine all ingredients in a container of an electric blender and puree pu·rée or pu·ree  
tr.v. pu·réed or pu·reed, pu·rée·ing or pu·ree·ing, pu·rées or pu·rees
To rub through a strainer or process (food) in a blender.

 3 minutes. Chill overnight before using.

SWEETENED CONDENSED MILK

1 cup nonfat non·fat
adj.
Lacking fat solids or having the fat content removed.
 powdered milk

1 cup sugar

1/3 cup boiling water

3 tablespoons melted margarine (use solid, not whipped)

Combine all ingredients in a container of an electric blender and puree until smooth. Store in refrigerator. Makes 1 1/4 cups.

HOMEMADE SWEETENED CONDENSED MILK

1/2 cup boiling water

3 tablespoons melted butter OR margarine

1/2 cup sugar

1 1/3 cups powdered milk

Put water in a container of an electric blender; add butter, then sugar and dry milk. Blend a few seconds. Scrape down sides and blend again. Let set until thick. Refrigerate. Makes 1 1/3 cups.

HOMEMADE SWEETENED CONDENSED MILK

1 cup nonfat dry milk Noun 1. nonfat dry milk - dehydrated skimmed milk
dried milk, dry milk, milk powder, powdered milk - dehydrated milk
 

1/3 cup warm water

3 tablespoons melted butter OR margarine

2/3 cup sugar

1/8 teaspoon salt

In a blender or food processor, combine all ingredients; process until smooth. Let mixture stand until thickened thick·en  
tr. & intr.v. thick·ened, thick·en·ing, thick·ens
1. To make or become thick or thicker: Thicken the sauce with cornstarch. The crowd thickened near the doorway.

 a little. Refrigerate. Mixture will keep a few weeks in refrigerator. Makes about 1 1/3 cups.

My mother used to make a mashed potato casserole with grated carrots, sour cream, mustard and shredded Cheddar cheese for the holidays that we loved. I've lost the recipe and am hoping that someone can help me.

Also I'm looking for a recipe similar to the sweet and sour sweet and sour adjagridulce  house salad dressing at Mimi's restaurants. It's to die for.
