 of Granada Hills accidentally tossed a food section that contained a recipe for ranch steak The Ranch steak comes from the chuck cut of a cow, namely the shoulder. Technically it is called a "boneless chuck shoulder center cut steak", but supermarkets in an effort to get the patron a better sounding as well as an easier to remember name dubbed it the "Ranch steak".  made with round steak and dry ranch dressing mix. Two readers sent along recipes to share.

Virginia Breivogel's recipe came from a food section and is good, she noted. Ruth Nebron sent along the original Ranch Flank Steak Noun 1. flank steak - a cut of beef from the flank of the animal
flank - a cut from the fleshy part of an animal's side between the ribs and the leg

beefsteak - a beef steak usually cooked by broiling
 recipe from the manufacturer of Hidden Valley Ranch Dressing.

Both steak entrees are great for an al fresco dinner.

RANCH STEAK

3 tablespoons vegetable oil

1 medium onion, sliced thin

1 1/2 to 2 pounds round steak, about 1/2-inch thick

Salt and pepper

1/3 cup flour

3/4 cup beef broth Noun 1. beef broth - a stock made with beef

broth, stock - liquid in which meat and vegetables are simmered; used as a basis for e.g. soups or sauces; "she made gravy with a base of beef stock"
 

1 tablespoon dry ranch dressing mix

1/2 cup dairy sour cream

In a large skillet, heat oil. Fry onion until limp. Remove from skillet and reserve.

Cut meat in serving-size pieces. Sprinkle on both sides with salt and pepper to taste. Dust lightly with flour. Brown on both sides in skillet, adding additional oil if necessary.

Return onion to skillet with meat. Add beef broth, cover and simmer until meat is tender, about 1 hour.

In a bowl, combine ranch dressing mix and sour cream. Remove meat to a platter. Stir sour cream mixture into pan juices and heat through. Pour over meat. Makes 8 servings.

RANCH FLANK STEAK

1 packet (1 ounce) dry Hidden Valley Original Ranch Dressing Mix

1 tablespoon red wine vinegar Noun 1. wine vinegar - vinegar made from wine
vinegar, acetum - sour-tasting liquid produced usually by oxidation of the alcohol in wine or cider and used as a condiment or food preservative
 

2 tablespoons olive oil olive oil, pale yellow to greenish oil obtained from the pulp of olives by separating the liquids from solids. Olive oil was used in the ancient world for lighting, in the preparation of food, and as an anointing oil for both ritual and cosmetic purposes.  

1 (1-pound) flank steak

In a resealable plastic bag, combine ranch dressing, red wine vinegar and olive oil. Add flank steak and marinate mar·i·nate  
v. mar·i·nat·ed, mar·i·nat·ing, mar·i·nates

v.tr.
To soak (meat, for example) in a marinade.

v.intr.
To become marinated.
 1 hour. Discard marinade.

On preheated grill or barbecue, cook steak until done as desired. Slice diagonally into slices and serve. Makes 4 servings.

Swedish pancakes

Rita Lipshutz of Woodland Hills requested a recipe for Swedish pancakes like the ones served at the International House of Pancakes, and M. Cicero is sharing a longtime family favorite.

These Swedish pancakes can be served with cut up lemon wedges and powdered sugar or your favorite syrup.

SWEDISH PANCAKES

1 cup all-purpose flour

Dash salt

3 eggs, beaten

1 cup milk

Butter 1/4 cup (1/2 stick) plus additional butter, melted

Olive oil

In a bowl, combine flour and salt. Make a well in dry ingredients.

In another bowl, combine eggs, milk and 1/4 cup butter, melted. Pour mixture into well. Mix with a mixer. Batter will be runny run·ny

In an electric skillet or regular skillet, heat equal amounts of butter and oil. Pour desired amount of pancake batter into hot skillet to make pancakes, the size desired. When pancakes are golden on bottom, turn and brown other side until golden.

Serve with lemon wedges, powdered sugar or syrup, as desired.
