COOK'S CORNER : LOST LEMON CAKE RECIPE RESURRECTED.

Beryl Fitzpatrick of Northridge requested a recipe for Lemon Cake that appeared in the paper and was inadvertently tossed.

The recipe originally appeared in the Restaurant Replica column years ago and is a copycat version of Miss Grace's Lemon Cake. It's a favorite with readers and we've reprinted it numerous times. This easy, streamlined version uses a lemon cake mix as the base.

LEMON CAKE

1 package (18.2 ounces) pudding-included lemon cake mix

1 package (3 ounces) lemon-flavored gelatin gelatin or animal jelly, foodstuff obtained from connective tissue (found in hoofs, bones, tendons, ligaments, and cartilage) of vertebrate animals by the action of boiling water or dilute acid.  

3 eggs

3/4 cup vegetable oil

3/4 cup water

Lemon Glaze

In the large bowl of an electric mixer, combine cake mix and gelatin. Add eggs, oil and water. Beat on low speed to combine; increase speed to medium and continue beating another 2 minutes.

Turn batter into a 12-cup greased Bundt pan.

Bake in preheated 350-degree oven 45 to 50 minutes or until a toothpick toothpick,

LEMON GLAZE: Combine 2 tablespoons melted butter with 1 1/2 cups sifted powdered sugar and 3 to 4 tablespoons fresh lemon juice, mixing until smooth.

ALMOST BAKLAVA (Shared by ElsieDe Santis, Glendale)

6 frozen puff pastry shells (Pepperidge Farms)

1 cup honey, warmed

2 cups finely chopped walnuts

1/4 teaspoon ground cinnamon

Grated peel of 1 lemon

Thaw pastry shells.

In a bowl, combine honey, walnuts, cinnamon and lemon peel. Stir well. Keep warm so mixture will spread.

Roll each pastry shell to about 7x10-inch paper-thin oblong. Spread each with 1/6 of honey mixture. Stack oblongs evenly atop one another on a foil-lined cookie sheet to make 1 oblong. Trim if necessary to even up edges.

Bake in preheated 400-degree oven 18 to 20 minutes or until golden brown. Cool and cut into squares or rectangles.
