COOK'S CORNER : FRAPPUCCINO CAKE MAKES CHILLY TREAT.

A dessert of cake infused with a liquid such as coffee or rum, layered with a rich cheese filling, and topped with grated chocolate.
 ice cream cake Ice cream cake is either ice cream in the shape of a cake or ice cream and cake layered together to make a single form. The idea of ice cream cake came from desserts composed of cream and cookies or cake called trifles, which first turned up in the Renaissance.  recipe. While going through our files, I came across this ice cream cake. Although not an authentic Italian tiramisu ice cream cake, it is a great alternative. This lavish dessert is perfect to end a warm-weather meal.

MOCHA Mocha (mō`kə), town (1990 est. pop. 2,000), S Yemen, a port on the Red Sea. It was noted for the export of the coffee to which it gave its name but declined as a trading port in the late 19th cent. with the rise of Hodeida and Aden.  FRAPPUCCINO ICE CREAM TIRAMISU CAKE

1 package (10.75) frozen reduced-fat poundcake, thawed

1/3 cup cooled espresso OR double-strength coffee

1 quart low-fat mocha frappuccino ice cream, softened (such as Starbucks)

2 teaspoons finely ground espresso OR coffee

2 cups fat-free frozen whipped topping Whipped topping is a non dairy product made to resemble the taste, texture, and look of whipped cream. Whipped Topping normally contains some mixture of partially hydrogenated oil, sweeteners, and other ingredients. , thawed

8 chocolate-covered coffee beans Chocolate-covered coffee beans are confections made by coating roasted coffee beans in some kind of chocolate: dark chocolate, milk chocolate, or even white chocolate. They are usually only slightly sweet, especially the dark chocolate kind, and the intense, bitter flavor of the  for garnish (optional)

Line a 9x5 inch loaf pan with plastic wrap.

Cut poundcake horizontally into 4 slices. Place 1 poundcake layer in loaf pan, cutting cake to fit, if necessary. Drizzle cake with 1/3 of the 1/3 cup cooled espresso. Spread 1/3 of ice cream to cover poundcake (4 layers of cake to 3 layers of ice cream.

Cover cake and freeze until firm, about 2 to 3 hours.

To serve, remove loaf and plastic wrap from pan. Stir finely ground espresso into whipped topping. Frost top and sides of loaf with mixture. Garnish with coffee beans. Makes about 8 servings.

VARIATION: Use other coffee-flavored ice creams.

Sloppy Joes

In last week's column, the original recipe for Beef Barbecue sloppy Joes mixture did not include the beef amount. The complete recipe follows.

BEEF BARBECUE

4 pounds beefs stew meat, in cubes

1 can (1 pound, 14 ounces) tomatoes

1 can (1 pound, 14 ounces) water

2 medium onions, chopped

1/2 teaspoon chili powder

1 cup ketchup

1/4 cup vinegar

1/4 cup Worcestershire sauce

4 cloves cloves

In a large saucepan, combine all ingredients. Simmer, uncovered, over low heat 5 to 6 hours or until beef falls into shreds. Mixture should be thick.

A salad of finely shredded raw cabbage and sometimes shredded carrots, dressed with mayonnaise or a vinaigrette.
 Dressing. They are no longer available, and I have not found anything I like as well. I used to make my pasta salads with them and received many compliments.
