COOK'S CORNER : EL TORITO'S CORN CAKES.

Cheri Grady of North Hills once had the copycat version of the El Torito The format developed by Phoenix Technologies and IBM that has become the standard for creating bootable CD-ROMs on the Intel platform. El Torito provides only the format. In order to make a CD-ROM bootable, the correct boot images must be placed on the disc, and the target computer must  restaurant sweet corn cakes but lost it and would like it replaced. This recipe has been floating around for the past 10 years and came from a local newspaper. Enjoy!

SWEET CORN CAKES

2 tablespoons lard

1/4 cup butter

1/2 cup masa

3 tablespoons cold water

10 ounces frozen corn kernels Corn kernels are readily available in bulk throughout maize producing areas. The price as of 2005 is only about $1.80 per bushel in the U.S. This makes it the most inexpensive of all pelletized fuels. Pelletized fuels are used for corn and pellet stoves and furnaces.  OR large cobs, kernels removed

3 tablespoons cornmeal corn·meal also corn meal

1/4 teaspoon baking powder

1/4 teaspoon salt

Place lard and butter in a mixer bowl and whip until butter softens. Continue whipping until mixture becomes fluffy and creamy. Add masa gradually and mix until thoroughly incorporated. Add water gradually, mixing thoroughly.

Place corn kernels in a blender and blend until coarsely chopped. Stir into masa mixture.

Place cornmeal, sugar, whipping cream, baking powder and salt in a large mixing bowl. Mix quickly. Add butter-masa mixture. Mix just until blended.

Pour into an 8-inch buttered baking pan. Cover with foil.

Bake in preheated 350-degree oven 40 to 50 minutes or until corn cake has a firm texture. Let stand at room temperature 15 minutes before cutting.

Cut into squares or use a small ice cream scoop. Makes 10 (2-ounce) servings.

NOTE: Serve with grilled poultry, meats or Mexican food.

David Pesce of Tarzana has had a craving for Lobster Newburg but can't find the dish on any restaurant menu and thought he'd try preparing it himself. While searching through our files, I found an easy recipe he can fix at home.

LOBSTER NEWBURG

1 1/2 cups whipping cream

3 egg yolks, well beaten

Salt and freshly ground pepper to taste

3 cups cooked lobster meat

1 tablespoon butter

1 tablespoon sherry

Heat cream in a heavy-bottomed saucepan over medium-high heat until hot but not boiling. Remove from heat.

Stir a little of hot cream into egg yolks, then pour egg yolk yolk (yok) the stored nutrient of an oocyte or ovum.

Return pan to medium heat and cook and stir until mixture thickens enough to coat back of a spoon.

NOTE: Serve as is with crisp buttered toast, or with steamed rice.
