COOK'S CORNER\Recipes to help you land delicious tuna burgers, patties.

Several readers sent along recipes for tuna burgers or patties as requested by P. Silverman of Encino, who remembers eating them more than 20 years ago. Silverman has a trio of excellent choices that go together in a jiffy A fraction of time that has numerous interpretations depending on who uses it. It may refer to one computer clock cycle, one nanosecond, one millisecond or one AC power cycle. There may be others. See nanosecond.

pickle - vegetables (especially cucumbers) preserved in brine or vinegar

bread and butter pickle - thinly sliced sweet pickles
 relish. Mary Sanders' recipe contains tuna in combination with Cheddar cheese, ranch salad dressing, onion and red or green bell peppers. Alice Jacobs of Topeka, Kan., was in California when the request ran and sent along a recipe she found in Hellman's Mayonnaise Best Foods cookbook.

1 egg

1 can (6 1/2 ounces) tuna, drained

1 cup fresh bread crumbs OR 1/2 cup dry bread crumbs

1/2 cup mayonnaise

2 tablespoons chopped onion

2 tablespoons sweet pickle relish

1 tablespoon butter OR margarine, melted

Beat egg. Stir in tuna, bread crumbs, mayonnaise, onion and pickle relish. Shape into 4 to 6 patties.

Brown on both sides in butter in a hot skillet. Make 4 to 6 patties.

1 1/4 cups bread crumbs

1 can (12 1/2 ounces tuna, drained

3/4 cup shredded Cheddar cheese

1/4 cup mayonnaise

1 egg

1/3 cup ranch salad dressing

1/2 cup chopped onion

1/2 cup chopped red OR green bell pepper (optional)

2 tablespoons vegetable oil

Set aside 3/4 cup of bread crumbs. Combine all remaining ingredients, except oil.

Form mixture into 8 patties, coating each side with 3/4 cup reserved bread crumbs.

Heat 1 tablespoon oil in a nonstick non·stick

 skillet over medium heat. Cook 4 patties 4 to 5 minutes on each side. Add remaining tablespoon oil to skillet. Cook remaining 4 tuna patties, 4 to 5 minutes per side. Makes 8 servings.

TUNA PATTIES (Shared by Alice Jacobs,Topeka, Kan.)

1 can (6 1/2 ounces) tuna, drained and flaked

3/4 cup dry bread crumbs

1 egg, lightly beaten

1/2 cup minced celery, optional

1/3 cup real, light OR cholesterol- free reduced calorie mayonnaise

1/4 cup minced onions

1 teaspoon lemon juice

Mix tuna, bread crumbs, egg, celery, mayonnaise, onions and lemon juice until blended.

Cover and chill 1 hour. Shape into 4 patties.

Heat a lightly greased skillet over medium heat. Add tuna patties and cook, turning once, about 6 minutes per side or until lightly browned. Makes 4 patties.

Spanish Rice

Lucille Andersen of Van Nuys lost her recipe for Spanish Rice during a recent move.

Here's a basic one I've served my family for years with good success. It's one of those tried-and-true weekday menu standbys that appeals to young and old alike. It's one of my son's often-requested favorites. A green salad is all that's needed to complete the meal.

SPANISH RICE SUPPER

1 pound lean ground beef

1 onion, chopped

1/2 green bell pepper, chopped

1 cup uncooked converted rice con·vert·ed rice

A white rice prepared from brown rice that has been soaked, steamed under pressure to force water-soluble nutrients into the starchy endosperm, and then dried and milled.
 

1 can (28 ounces) cut-up and peeled tomatoes, undrained

1 can (6 ounces) tomato paste

1 cup water

2 teaspoons ground cumin cumin or cummin (both: kŭm`ĭn), low annual herb (Cuminum cyminum) of the family Umbelliferae (parsley family), long cultivated in the Old World for the aromatic seedlike fruits.  

1/4 cup canned diced green chiles

1/2 teaspoon salt

1/4 teaspoon pepper

In a 10-inch skillet, cook beef, onion and green pepper over medium-high heat, stirring often, until beef is browned, 8 to 10 minutes. Drain off excess fat.

Stir in rice, tomatoes with their liquid, tomato paste, water, cumin and chiles. Heat to boiling, stirring occasionally. Reduce heat to low.

Cover pan and simmer over low heat 30 to 35 minutes or until rice is tender. Stir in salt and pepper

I'm looking for a recipe called No Peekie Chicken that was cooked in a crockery pot. The chicken absorbed all the spices (the list was long) and juices and was very moist, tender and spicy. The recipe contained paprika paprika: see pepper. , and the finished chicken had an orange-red color. I was given the recipe 15 years ago in Pasadena and it was a winner. Can anyone help?
