COOK'S CORNER VEGETABLE SOUP WITH CHILI'S FLAVOR.

Some time ago, Marie Hart of Northridge requested a recipe for the Southwest Vegetable Soup served at Chili's restaurants that she noted was no longer offered on the menu. She was interested in making it at home.

She's in luck, because reader Joni Schaper sent along a Top Secret Recipes version by cookbook author Todd Wilbur. Wilbur notes that you just toss all the ingredients in a pot and simmer about an hour. Garnish with shredded shred

SOUTHWESTERN VEGETABLE SOUP

SOUP:

6 cups chicken broth Noun 1. chicken broth - a stock made with chicken

In the United States retail environment, however, the term refers to a relatively recent arrival in the processed tomato market, generally consisting of canned chunks of plum tomatoes in tomato , with juice

1 cup water

1 cup canned dark red kidney beans, with liquid

1 cup frozen yellow cut corn

1 cup frozen cut green beans green beans

1 (4-ounce) can diced green chiles

1/2 cup diced Spanish onion Spanish onion

1/2 cup tomato sauce

6 corn tortillas, minced

1 1/2 teaspoons chili powder

Dash garlic powder

GARNISH:

1 cup shredded Cheddar/Jack cheese blend

1 cup crumbled corn tortilla chips

To make Soup, combine all soup ingredients in a large saucepan. Bring soup to a boil over high heat. Reduce heat and simmer 45 minutes to 1 hour or until soup has thickened thick·en

To serve soup, ladle 1 1/2 cups into a bowl. Sprinkle a heaping tablespoon of cheese over top of soup and then top with a heaping tablespoon of crumbled tortilla chips. Makes 6 servings.

MINT SAUCE: When the call went out for a good mint sauce for rack of lamb Noun 1. rack of lamb - a roast of the rib section of lamb

 from Dorothy Tuso of Rancho Vista, a few readers sent along recipes with varying proportions of sugar, vinegar and mint. The version from Kathleen Kirby of Granada Hills was passed down from her grandmother (who was English).

MINT SAUCE

(Shared by Kathleen Kirby, Granada Hills)

1 1/2 teaspoons sugar

1/4 cup white vinegar

1 teaspoon lemon juice

1 tablespoon water

2 tablespoons chopped mint leaves

Combine first 4 ingredients, mixing until sugar dissolves. Add mint leaves and let stand in warm place until needed. Use a spoon to sprinkle over lamb slices. Makes 6 servings.

NOTE: Do not refrigerate re·frig·er·ate

1/2 cup sugar

Rinse mint leaves and pat dry with a towel. Chop finely and pack into small jars. In a saucepan, boil vinegar with sugar until it has dissolved, then pour over mint. Mix well, then screw down the lids. Store in a dark cupboard. To use: dilute with lemon juice and water to taste.
