COOK'S CORNER SCHOOL'S IN SESSION WITH RECIPE FOR SWEET ROLLS.

Several readers came through with the recipe for the school sweet rolls requested by Jeanne Shaw. It has been making the rounds for years - and dates back to the 1950s, when school cafeterias served them. Enjoy!

CITY SCHOOL SWEET ROLLS

1. A cake yeast made by filtering the cells from the liquid in which they are grown, subjecting to heavy pressure, and mixing with starch or flour.
 

2 cups lukewarm milk

1/2 cup sugar

2 teaspoons salt

1/2 cup solid vegetable shortening

1 egg

1 cup cake flour

5 cups bread flour

3/4 to 1 1/2 teaspoons ground nutmeg nutmeg, name applied to members of the family Myristicaceae. The true nutmeg (Myristica fragrans) is an evergreen tree native to the Moluccas but now cultivated elsewhere in the tropics and to a limited extent in S Florida.  

1/4 cup (1/2 stick) butter OR margarine, melted

Cake Crumb Filling

Powdered Sugar Glaze glaze, in pottery
glaze, translucent layer that coats pottery to give the surface a finish or afford a ground for decorative painting. Glazes—transparent, white, or colored—are fired on the clay.
 

Dissolve yeast cakes in lukewarm milk. Combine sugar, salt, shortening and egg in mixing bowl and beat at low speed 1 minute. Add milk mixture and beat 1 minute. Add cake and bread flours and nutmeg and mix only enough for flour to be incorporated, not more than 5 minutes.

Roll out to 18x12-inch rectangle. Brush with butter and sprinkle with Cake Crumb Filling. Starting from 18-inch side, roll up jellyroll fashion. Cut into 1-inch slices. Place, cut-side down, on greased baking sheets, and pat out fairly flat. Let rise until doubled.

Bake in preheated 400-degree oven 15 minutes. When partially cooled, brush with Powdered Sugar Glaze. Makes 18 rolls.

CAKE CRUMB FILLING: In a small bowl, combine 1 cup plain cake crumbs CRUMBS is an improvisational theatre duo based in Winnipeg, Manitoba, Canada.

The duo consists of two actors, Stephen Sim, and Lee White. Other members include videographers, musicians, photographers, webmasters, illustrators, producers, agents, publicists, graphic
, 1/2 cup packed brown sugar and 1 teaspoon ground cinnamon. Mix well.

POWDERED SUGAR GLAZE: In a medium bowl, mix 2 cups powdered sugar and 1/4 cup hot water until smooth. Stir in 1 teaspoon vanilla.

SPINACH SOUFFLE

2 packages frozen spinach, defrosted, reserving all liquid

3 eggs

1/2 cup whipping cream Noun 1. whipping cream - cream that has enough butterfat (30% to 36%) to be whipped
light whipping cream

cream - the part of milk containing the butterfat
 

1 green onion, chopped

4 tablespoons butter, melted

Salt

Whirl spinach, eggs, cream and green onion in covered blender until well mixed. Add butter and season to taste with salt. Turn into a 1 1/2-quart casserole.

Bake, uncovered, in preheated 325-degree oven 1 hour and 15 minutes or until mixture appears set when pan is gently shaken. Makes 6 servings.
