COOK'S CORNER ESPRESSO MAKES THE STEAK.Byline: Natalie Haughton Food Editor Ventura resident Renee Pokorny has been named one of the 20 finalists in the National Beef Cook-Off thanks to her recipe Grilled Espresso Steaks. She'll compete for the $50,000 Best of Beef grand prize in Rapid City, S.D., on Sept. 21. Pokorny, who entered 16 recipes in this year's contest, notes that the recipe selected in the grilled beef category uses coffee in an unusual way - ground espresso beans in a rub on the steaks. A couple of years ago, restaurants in Seattle and Chicago were offering steaks with coffee treatment. I sampled a special espresso hangar steak at MK in the Chicago area last year, and it was delicious. The coffee flavoring was very subtle and not overpowering. Give Pokorny's recipe a whirl - it's easy and sounds terrific. GRILLED ESPRESSO STEAKS ESPRESSO RUB: 2 tablespoons finely ground espresso coffee beans coffee bean see sesbania. (OR finely ground regular ground coffee) 1 tablespoon garlic pepper 2 teaspoons kosher kosher [Heb.,=proper, i.e., fit for use], in Judaism, term used in rabbinic literature to mean what is ritually correct, but most widely applied to food that is in accordance with dietary laws based on Old Testament passages (primarily Lev. 11 and Deut. 14). OR regular table salt 2 teaspoons brown sugar 1 teaspoon ancho an·cho n. pl. an·chos A dried poblano pepper. [American Spanish (chile) ancho, wide (chili), from Spanish, from Old Spanish, from Latin amplus; see ample.] chile powder BEEF: 4 beef tri-tip steaks, cut 1-inch thick (about 6 ounces EACH) Green onions, lemon wedges and freshly grated grate 1 v. grat·ed, grat·ing, grates v.tr. 1. To reduce to fragments, shreds, or powder by rubbing against an abrasive surface. 2. lemon peel (optional) Combine all Espresso Rub ingredients in a small bowl, mixing well. Press generously onto beef steaks. Discard any remaining seasoning mixture. Place steaks in glass dish. Cover and refrigerate re·frig·er·ate tr.v. re·frig·er·at·ed, re·frig·er·at·ing, re·frig·er·ates 1. To cool or chill (a substance). 2. To preserve (food) by chilling. 1 hour. Place steaks on grid over medium, ash-covered coals. Grill, uncovered, 13 to 17 minutes for medium-rare to medium doneness, turning occasionally. Carve steaks into slices.
