Molasses contains chiefly the uncrystallizable sugars as well as some remnant sucrose.  cookies like Van de Kamp's and Helms bakeries used to make. Three readers sent along recipes.

MOLASSES CRINKLES (Shared by Ruth

3/4 cup soft vegetable shortening

1 cup packed brown sugar

1 egg

1/4 cup molasses

2 1/4 cups sifted all-purpose flour

2 teaspoons baking soda baking soda: see sodium bicarbonate.  

1/4 teaspoon salt

1/2 teaspoon ground cloves

1 teaspoon ground cinnamon

1 teaspoon ground ginger

refined sugar, sugar - a white crystalline carbohydrate used as a sweetener and preservative

In a bowl, thoroughly mix together shortening, brown sugar, egg and molasses.

Sift together and stir in flour, baking soda, cloves, cinnamon and ginger.

Chill dough. Roll into balls size of large walnuts. Dip tops in granulated sugar. Place, sugared-side-up, 3 inches apart on a greased baking sheet baking sheet

. Sprinkle each cookie with 2 or 3 drops of water to produce a crackled surface.

Bake in preheated 375-degree oven 10 to 12 minutes or just until set but not hard. Makes about 4 dozen 2 1/2-inch cookies.

OLD-FASHIONEDMOLASSES COOKIES (Shared by Peter A. Grisanti, Granada Hills)

1 cup stone-ground 100 percent whole-wheat flour

3/4 cup unbleached white flour with wheat germ wheat germ

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 cup soft vegetable shortening OR butter

3/4 cup packed brown sugar

1 egg

1/4 cup molasses

Combine and mix first 5 ingredients in a bowl and set aside.

Beat shortening until creamy. Add brown sugar gradually; beat well after each addition. Add egg and molasses; beat until smooth. Blend in Verb 1. blend in - blend or harmonize; "This flavor will blend with those in your dish"; "This sofa won't go with the chairs"

 dry ingredients and mix well.

Chill dough 1 to 2 hours. Shape dough into balls using a level tablespoon of dough for each. Place balls 2 inches apart on ungreased baking sheets.

Bake in preheated 325-degree oven 15 to 18 minutes. Transfer to wire racks to cool. Makes about 3 1/2 dozen cookies, 2 1/2 inches each in diameter.

MOLASSES COOKIES (Shared by Frances

3/4 cup vegetable oil

1 cup sugar, plus extra for rolling

1 egg

1/4 cup dark molasses

2 teaspoons baking soda

2 cups flour

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

In a bowl, beat together oil, 1 cup sugar, egg and molasses. Sift and add dry ingredients. Mix well.

Chill. Roll into 1-inch balls. Roll in sugar and place on cookie sheets.

Bake in preheated 375-degree oven 8 to 10 minutes. Tops will have a crackled look.
