HERE'S WHAT'S BAKING baking: see cooking.
baking

Process of cooking by dry heat, especially in an oven. Baked products include bread, cookies, pies, and pastries.
 

When the audience gets samples of the food being judged it must be a contest worth attending.

The Antelope Valley

``It's a fun event and very laid back,'' said Cooyla DuFrene, special baking chairwoman. ``Everybody seems to have a good time.''

Entries come in by 6 p.m., and around 6:30 p.m. the judges start sampling. As decisions are made, small samples are passed to the audience members so they can taste for themselves.

Categories range from favorite cheesecake to men's baking night; salsa; and a new one, favorite appetizer.

The special baking contests are the only ones judged in public during the fair and the only one in which the judges are not professionals.

Other cooking and baking at the fair will be judged by home economic teachers and gourmet chefs before the fair even begins.

The only requirement of the special baking contest judges, usually three per category, is that they must like the food being judged that evening. This isn't too hard when it comes to cheesecake and favorite chocolate dessert.

The judges stick with the same basic guidelines guidelines,

And over the years, DuFrene has found that it's from the audience the contests get many of their future entrants.

Entries can still be made in the Special Baking Contest. Call (661) 948-6060 Ext. 3 and explain your interest. People can also volunteer to be judges. Call and leave your name, number and which category sounds delicious.

Here's the schedule for the fair's special baking contests, which include audience participation.

Today: Favorite Cheesecake

Sunday: Men's Baking Night

Monday: Any Fruit Pie

Tuesday: Favorite Appetizer

Wednesday: Favorite Cake

Thursday: Any Other Pie

Friday: Favorite Salsa

Sept. 4: Favorite Apple Pie apple pie
