CHILI LOVERS PLEASE PALATES AT COMPETITION.

Byline: Don Holland Daily News Staff Writer

The art of chili was in all its splendor Sunday as aficionados from around Southern California Southern California, also colloquially known as SoCal, is the southern portion of the U.S. state of California. Centered on the cities of Los Angeles and San Diego, Southern California is home to nearly 24 million people and is the nation's second most populated region,  went palate to palate at the scenic Paramount Ranch for the first Agoura Chili Cook-off.

The sanctioned competition drew 10 seasoned chili cooks, including Joseph Barrett, a nine-year veteran of chili competitions and the reigning champion chili cook of Mexico.

Barrett, a retired Los Angeles Los Angeles (lôs ăn`jələs, lŏs, ăn`jəlēz'), city (1990 pop. 3,485,398), seat of Los Angeles co., S Calif.; inc. 1850.  County sheriff's sergeant, and his wife, Marilee, take the business of chili very seriously.  have invested more than $2,000 in canopies, pots and other necessities of competition. But the low-key events are an awful lot of fun and a good excuse to travel around the country on the chili circuit.

``There's a lot of social life here,'' Barrett said as he and his wife prepared ingredients. ``We know a lot of the cooks. We can go anywhere in the country and we'll know somebody in the cook-off.''

Marilee Barrett, who has twice taken the Montana state championship, added that the prestige of winning the world chili championship is also a factor.

Dave Thomas of Point Mugu draws from his ready repertoire of one-liners as he serves up tiny cups of his blend.

``This stuff is so good, it might be outlawed,'' quipped Thomas, who works at Moorpark College Moorpark College is a California-state funded community college located on a 134 acre (542,000 m²) property reclining on a hill in Moorpark, a town in Ventura County, California. .

``It's almost as good as mom's,'' he tells one chili lover. ``But I don't like to compete with mom.''

Chili judge Don Leach said he and his fellow tasters look for a ``perfect blend of spices where you can't distinguish one spice from another. We want to see the vegetables cooked down and become part of the sauce.''
