CHERRY CAKE RECIPE CORRECTION.The recipe for Blitz Cherry Cake in last week's Food Section was missing the amount of orange juice (1 cup). Also, one of the baking pan choices should have read 2 (9x5-inch) loaf pans, not one. The corrected recipe follows. BLITZ CHERRY CAKE 3 cups all-purpose flour 1/2 teaspoon baking soda baking soda: see sodium bicarbonate. 2 1/2 teaspoons baking powder 1/2 teaspoon salt 1 cup vegetable oil 2 cups sugar 4 eggs 2 teaspoons vanilla 2 drops almond and/OR lemon extract Noun 1. lemon extract - a flavoring made from (or imitating) lemons flavorer, flavoring, flavourer, flavouring, seasoning, seasoner - something added to food primarily for the savor it imparts 1 cup fresh orange juice 1 can (19 ounces) cherry pie Cherry pie is a pie made with a cherry filling. Morello cherries (sour cherries) are often used in cherry pies. Cherries are expensive — and sweet varieties are best used eaten fresh and raw. Sour cherries are best for cooking and may be used fresh or preserved. filling Lightly grease a 10-inch springform pan spring·form pan n. A cake pan having an upright rim that can be unclamped and detached from the bottom of the pan. , a 9x13-inch rectangular pan, or 2 (9x5-inch) loaf pans. In a medium-sized bowl, using a large whisk, blend together dry ingredients. Make a well in center and blend in Verb 1. blend in - blend or harmonize; "This flavor will blend with those in your dish"; "This sofa won't go with the chairs" blend, go fit, go - be the right size or shape; fit correctly or as desired; "This piece won't fit into the puzzle" oil, sugar, eggs, vanilla and almond extracts and orange juice. Stir to make a smooth batter. Pour 3/4 of batter into prepared pan, then cherry filling, then 1/2 of remaining batter. Top with remaining 1/4 of batter dropped in dollops. It will be uneven, but it does not matter. Bake in preheated 350-degree oven 55 to 60 minutes, depending on pan used. Cake will be set on top when baked and firm to touch. Makes 8 to 10 servings. VARIATIONS: For Blitz Blueberry blueberry, plant of the large genus Vaccinium, widely distributed shrubs (occasionally small trees) of the family Ericaceae (heath family), usually found on acid soil. They are often confused with the related huckleberry. or Blitz Apple Cake, use 1 can blueberry OR apple pie filling to replace cherries. Proceed as directed.
