Breakfast for Mom can be fun for whole family.

Sunday is the day to show appreciation to all our mothers. In many households, it is the custom to serve Mom a fancy breakfast or brunch so she can sleep in and enjoy being waited on.

The menu will depend on who is doing the cooking. If the kids are in charge, it should be something easy and not too messy. Kids love to make smoothies, so start with an Orange Slush slush  
n.
1. Partially melted snow or ice.

2. Soft mud; slop; mire.

3. Nautical Grease or fat discarded from a ship's galley.

4. A greasy compound used as a lubricant for machinery.
 made in the blender. It's refreshing and a good "waker-upper." For the main course, Breakfast Pizzas made on English muffins with a choice of various toppings will appeal to everyone.

If Dad is preparing the meal, it can be a little more sophisticated. He might choose a champagne (or ginger ale) fresh fruit compote for starters, served in over-sized wine glasses. The next course might be an updated version of Eggs Benedict with ham, tomato and a rich Chive chive: see onion.

Small, hardy perennial plant (Allium schoenoprasum) of the lily family, related to the onion. Its small, white, elongated bulbs and thin, tubular leaves grow in clumps.
 Hollandaise Sauce hol·lan·daise sauce

A rich creamy sauce made of butter, egg yolks, and lemon juice or vinegar.

 garnished with avocado slices and olives. Include coffee or tea, or for a special drink, serve Spiced Mocha Mocha (mō`kə), town (1990 est. pop. 2,000), S Yemen, a port on the Red Sea. It was noted for the export of the coffee to which it gave its name but declined as a trading port in the late 19th cent. with the rise of Hodeida and Aden.  with a dollop of whipped cream.

Don't forget that cleanup is part of the treat, so keep Mom out of the kitchen. This should be a fun family time together, and a day to remember.

Orange Slush

This is a delicious, nonalcoholic non·al·co·hol·ic
adj.
A beverage usually containing less than 0.5 percent alcohol by volume.
 drink similar to an Orange Julius.

1 can (6 ounces) frozen orange juice Noun 1. frozen orange juice - orange juice that has been concentrated and frozen
orange-juice concentrate

concentrate - a concentrated form of a foodstuff; the bulk is reduced by removing water

orange juice - bottled or freshly squeezed juice of oranges
 concentrate

3/4 cup cold water (an orange juice can full)

1 cup whole milk

2 tablespoons sugar

1 teaspoon vanilla extract

1 cup chipped ice

Combine all ingredients in a blender and blend until thick and frothy froth·y

2. Playfully frivolous in character or content: a frothy French farce.
. Pour into glasses and serve immediately. Serves 3 or 4.

Champagne Fruit Compote

All fruit should be well chilled for each serving.

Fresh pineapple, cut into bite-sized pieces

Kiwi slices

Mango slices

Orange slices, seeds removed

Strawberries or raspberries

1/3to 1/2 cup ice cold champagne or ginger ale

Fill each goblet about half full with fruit of your choice. Pour champagne over. Serve with a spoon. After the fruit is gone, serve more champagne in the glass to drink.

Breakfast Pizza

8 ounces bulk pork sausage

2 ounces medium mushrooms, coarsely chopped

1/4 teaspoon dried oregano oregano (ərĕg`ənō), name for several herbs used for flavoring food. A plant of the family Labiatae (mint family), Origanum vulgare,  

Freshly ground pepper

4 English muffins, split

1 jar (6 ounces) pizza sauce (will not use all)

1 cup grated mozzarella moz·za·rel·la

A mild white Italian cheese that has a rubbery texture and is often eaten melted, as on pizza.

Preheat oven to 400 degrees. In a medium skillet over medium heat, combine sausage, mushrooms, oregano and pepper to taste, and cook, breaking up sausage with a spoon, until pink is no longer showing in sausage, 6 to 7 minutes. Place muffin halves on a baking sheet. Spread pizza sauce lightly on each half. Spoon sausage mixture on top and sprinkle with cheese. Bake until muffin edges are crisp and cheese is melted, about 10 minutes. Makes 8 muffin halves.

Other topping choices:

Chopped olives

Chopped tomatoes

Sliced green onions

Omit sausage and use ground chicken or pepperoni slices

Omit mozzarella cheese and use Cheddar

Ham and Tomato Benedict With Chive Hollandaise Sauce

Ham slices and chopped tomatoes are layered on an English muffin and then topped with the traditional poached poach 1

To cook in a boiling or simmering liquid: Poach the fish in wine.
 egg and Chive Hollandaise Sauce.

4 English muffins, split, toasted and lightly buttered

1/4pound cooked ham, very thinly sliced

1 tomato, seeded, chopped and drained

4 English muffins, split, toasted and lightly buttered

8 poached eggs

Chive Hollandaise Sauce (recipe follows)

1 avocado, sliced, for garnish

8 ripe olives, sliced, for garnish

Place 2 muffin halves on each of 4 plates. Layer ham slices, tomato and eggs on each muffin half, and top with Chive Hollandaise Sauce. Garnish with avocado slices and olives. Serves 4.

Chive Hollandaise Sauce

This method of making hollandaise sauce is safe from salmonella because the egg yolks are cooked.

4 large egg yolks

3 tablespoons fresh lemon juice

1 tablespoon water

1/4teaspoon salt

Dash cayenne pepper

1 cup (2 sticks) butter (no substitute), melted

1 tablespoon chopped chives chives

In a small, heavy saucepan over medium-low heat, combine yolks, lemon juice, water, salt and cayenne pepper. Whisk constantly until mixture bubbles and begins to thicken thick·en

1. To make or become thick or thicker: Thicken the sauce with cornstarch. The crowd thickened near the doorway.

, 2 to 3 minutes. Scrape mixture into blender. Add butter in a slow, steady stream and blend until all the butter is used and sauce is thickened thick·en

, about 30 seconds. Add chives and blend for a few seconds. Makes about 11/2 cups.

Spiced Mocha

A blend of coffee and cocoa spiced with cinnamon and nutmeg. The whipped cream topping adds extra goodness.

1 cinnamon stick, broken up

4 cups freshly brewed, strong, hot coffee

1 tablespoon unsweetened cocoa powder

1/2 tablespoon sugar

Few gratings of nutmeg or dash of ground nutmeg

Whipped cream, for topping (optional)

Make coffee with the cinnamon stick in with the coffee grounds coffee grounds

. When coffee has brewed, stir in cocoa, sugar and nutmeg. Let this mixture stand for 5 minutes. Stir before serving. Top each serving with a dollop of whipped cream, if desired. Serves 4.
