Bob is trying to please everyone. Carb cutters get Low-Carb Choices and fat cutters get Lighter Fare Choices. Most are decent. Unfortunately, you can't tell by looking at the menu, which gives only one number (carbs or fat) per item.

The chain's Web site discloses calories, saturated fat saturated fat, any solid fat that is an ester of glycerol and a saturated fatty acid. The molecules of a saturated fat have only single bonds between carbon atoms; if double bonds are present in the fatty acid portion of the molecule, the fat is said to be , and sodium. Too bad those numbers aren't on the menu.

Low-Carb. Go for the good entrees (Grilled Chicken or Salmon) and good sides (broccoli broccoli (brŏk`əlē) [Ital.,=sprouts], variety of cabbage grown for the edible immature flower panicles. It is the same variety (Brassica oleracea botrytis) as the cauliflower and is similarly cultivated.  or Garden Salad A garden salad is a salad consisting of lettuce and simple vegetables found in a small vegetable garden such as tomatoes, carrots, onions, and dressing.  with light dressing, for example) and your meal stays at 500 to 600 calories and just 5 grams of sat fat (a quarter of a day's worth).

Worse yet are the bad entrees. The Cobb Salad The Cobb salad was a signature menu item of the legendary Brown Derby in Hollywood, a landmark restaurant in Los Angeles, California. Variations of the salad are now served in restaurants world-wide.  (made with egg, bacon, and cheese) dressed with buttermilk ranch hits 950 calories and 25 grams of sat fat--more than a day's worth. If you use the light ranch dressing you'll knock off only 50 calories.

For dinner, your best bet is the Grilled Chicken. As long as you get it with a Garden Salad with light dressing and broccoli or fresh fruit, you'll beat anything else on the Lighter Fare menu.

. And while you can get the Turkey Breast with salad and broccoli, it also comes with a baked potato (not great if you skip the skin).

Don't get us wrong, though. Compared to Bob Evans's (or anyone else's) regular menu, Bob's Lighter Fare wins hands down.
