Bring next four ingredients to a boil. Pour the boiled mixture over the flour/sugar mixture, and mix together. Add eggs, buttermilk, and vanilla. Pour into a pan that has either been sprayed with non-stick cooking spray or greased and floured. Cook at 350 degrees for 30-35 minutes. For the horseshoe cake shown, the recipe is doubled. SEVEN-MINUTE FROSTING: 1 1/2 cups sugar 5 tablespoons water 1 tablespoon Karo corn syrup 2 egg whites 1 teaspoon vanilla Place first 4 ingredients in a double-boiler. Stir until mixture gets hot, then beat for 7 minutes. Add vanilla: mix well. Double the recipe for the horseshoe cake. DERBY DAY SMOKED PORK LOIN 2 cups red wine 1 cup soy sauce 1 (5- to 6-pound) boneless pork loin 1 cup strongly brewed coffee 1/3 cup liquid smoke Garlic powder and freshly ground black pepper to taste Fresh rosemary Olive oil Leaf lettuce and parsley for garnish Mix wine and soy sauce, and pour over pork loin. Marinate for 24 hours. As pork is marinating, inject with a mixture of coffee and liquid smoke. Discard marinade. Rub loin with garlic powder, black pepper, and rosemary. Brush with olive oil. Let stand at room temperature for 1 hour. Place loin on smoker using half wet and half dry hickory chips, and cook until center reaches 225 degrees. Let stand for 30 minutes before slicing. Garnish with leaf lettuce and parsley. Serve with Dipping Sauce. This is good with warm yeast rolls.
