The rate of abnormal glucose levels per person was 27.1 percent during fasting and 17.8 percent and 17.2 percent one and two hours after eating, respectively. Following breakfast, glucose was elevated in 22.4 percent of patients after one hour, but only in 8.5 percent of patients after two hours. After lunch, the two values did not differ significantly. Following dinner, more two-hour measurements were elevated compared with one-hour measurements, at 30.1 percent and 16.3 percent, respectively. The researchers believe that these differences may be due to varied meal composition or to increased insulin resistance Insulin Resistance Definition
