Blending of spices makes Ali top chef; SUCCESSFUL COVENTRY RESTAURANT BOSS PLANS TO TURN LANDMARK BUILDING INTO A HUGE INDIAN AND THAI FOOD EATERIE.

ROIS Ali has a host of industry accolades which mark him out as one of the best Indian chefs in the country, if not the world.

He was International Indian Chef of the Year 1999 to 2001, and won the European Ethnic Food and Drink title last year.

He won the very first Hot Stuff Chef of the Year contest in 1995, and became famed for devising a 'diet' healthy curry option.

The restaurant he runs with brother Ashik in Tile Hill Tile Hill is a suburb in the west of Coventry. The railway line linking Rugby, Coventry and Birmingham goes through Tile Hill, and Tile Hill railway station is within Tile Hill near its eastern border with Solihull.  Lane is on the map, with diners Diners can mean:

 from as far afield as London.

Mr Ali says the secret to his success is in the blending of the spices, and moving Indian cuisine away from the "madras or vindaloo vin·da·loo

1. A blend of red chilis, tamarind, and other spices, such as ginger, cumin, and mustard seeds.

2. Any of various dishes of southern and central India made with this spice blend.

In 1998 he stood for Labour as a candidate for Coventry City Council but was not elected.
