, is preparing fresh locally grown California red abalone The red abalone, Haliotis rufescens, is a large brick colored mollusk that feeds on kelp and other algae along the coast of Oregon to Baja California. Being the largest, and most common abalone in the state it is the only species of abalone still commonly harvested in  as both a starter and an entree.
