Food Specialties recently unveiled a new application for its FirmFruit[R] enzyme system designed to enhance the appearance and consistency of processed tomato pieces in end-product applications. FirmFruit[R] is a natural pectin pectin, any of a group of white, amorphous, complex carbohydrates that occur in ripe fruits and certain vegetables. Fruits rich in pectin are the peach, apple, currant, and plum. Protopectin, present in unripe fruits, is converted to pectin as the fruit ripens.  methylesterase (PME) enzyme which can be integrated into existing processes to improve the quality and appearance of processed tomato products without affecting the ingredients label. FirmFruit[R] acts by de-methylating the pectin, which occurs naturally in tomatoes to create a strong pectate pec·tate
