Food Specialties recently unveiled a new application for its FirmFruit[R] enzyme system designed to enhance the appearance and consistency of processed tomato pieces in end-product applications. FirmFruit[R] is a natural pectin pectin, any of a group of white, amorphous, complex carbohydrates that occur in ripe fruits and certain vegetables. Fruits rich in pectin are the peach, apple, currant, and plum. Protopectin, present in unripe fruits, is converted to pectin as the fruit ripens. methylesterase (PME) enzyme which can be integrated into existing processes to improve the quality and appearance of processed tomato products without affecting the ingredients label. FirmFruit[R] acts by de-methylating the pectin, which occurs naturally in tomatoes to create a strong pectate pec·tate n. A salt or an ester of pectic acid. [pect(ic acid) + -ate2.] network with the calcium already present. The gelling characteristics of the pectin are altered from High Methylated meth·yl·ate n. An organic compound in which the hydrogen of the hydroxyl group of methyl alcohol is replaced by a metal. tr.v. meth·yl·at·ed, meth·yl·at·ing, meth·yl·ates 1. (HM) to LowMethylated (LM), improving the viscosity and consistency of tomato sauces and tomato pieces. As a result, tomato segments are firm, consistent in size and easy to identify. Mouthfeel and taste are also enhanced. The FirmFruit[R] concept is an application of Rapidase[R] FP Super technology from DSM. |
