Auction of Washington Wines Pairs Culinary Students with Seattle's Most Celebrated Chefs in Philanthropic Gift to the Community.SEATTLE -- Up and coming culinary students from two local community colleges will demonstrate their talents alongside some of Seattle's most celebrated chefs at the Auction of Washington Wines 17th Annual Gala Auction on Aug. 28 at Chateau Ste. Michelle The Chateau Ste. Michelle is a Washington winery in Woodinville, Washington. They are noted for their bestselling Riesling (as the largest single producer of Riesling in the world), but produce wines of many classic varietals and some experimental wines on a per-year basis. The celebration, touted among the nation's largest charity wine auctions by the Wine Spectator's annual charity auction review, pairs the creations of Seattle's finest culinary talent with world-class Washington wines to benefit Children's Hospital A children's hospital is a hospital which offers its services exclusively to children. The number of children's hospitals proliferated in the 20th century, as pediatric medical and surgical specialties separated from internal medicine and adult surgical specialties. and Regional Medical Center and the Washington Wine Education Foundation. This year marks the first time in the Gala's history that students, from the Seattle Culinary Academy at Seattle Central Community College Seattle Central Community College (SCCC) is a community college located in Seattle, Washington, in the Capitol Hill neighborhood. It is one of the three colleges which make up the Seattle Community College District. and from South Seattle Community College's Culinary Arts Department, will prepare, present and serve two of six courses in a spectacular culinary feast designed for 700 Gala participants. "Working the Gala will put students in touch with the reality of their chosen profession," says John Sarich, culinary director for Chateau Ste. Michelle and leader of the Gala Auction culinary team for the past 11 years. "They'll be involved in determining everything from the necessary ingredients to how best to present their course, to how to keep the food at the appropriate temperature from the time it leaves the kitchen to the time it reaches each guest." Sarich adds that, "If students perform well at this event it could potentially lead to future placement at one of the represented restaurants. At the same time, Gala guests get the opportunity to experience the work of new local talent, so it's really a winning situation all around." "The Gala will provide my restaurant cooking students with experience they can't get on campus," says Dillard. We're honored to be invited to participate." Charles Ramseyer, executive chef at Ray's Boathouse in Seattle, has shared in leading the Gala culinary team since 1993. Ramseyer donates his time, organizing the chefs on site, coordinating the production of each course, and contributing his own culinary creations. But he's not the only one -- all participating guest chefs and culinary staff donate their time. Jean-Claude Berger, pastry chef instructor, South Seattle Community College South Seattle Community College is a community college located in West Seattle, Washington. Founded in 1970, it is one of three colleges which make up the Seattle Community College District. Culinary Arts Department, concurs. "All chefs have a passion for what they do -- it's in their blood -- and they want to share their talents by giving back to the community. I want to pass my passion on to my students. I've worked the Gala behind the scenes for the past four years, cooking and dishing out, and I know how happy all of the participating chefs are for the opportunity to volunteer for this event -- because they love what they do. I want my students to share in this experience." Berger and his students will prepare Chocolate Cake layered with Chocolate Mousse, Fresh Bananas and Caramel, which Berger characterizes as "a take off on the classic Bananas Foster," for the dessert course. The remaining chefs on the Gala's celebrated culinary roster include Chris Ainsworth, executive chef of the Fish Club by Todd English; Janet Hedstrom, executive chef, Chateau Ste. Each chef has designed a course on the Gala menu and will oversee its production on-site. PICNIC kicks off Auction The Auction of Washington Wines kicks-off on Aug. 26, two days prior to the Gala Auction, with PICNIC, a casual, relaxed celebration held on the concert grounds at Chateau Ste. Michelle. The event takes place from 5 p.m. until dusk and includes its own silent and live auctions. PICNIC will feature Washington wines and gourmet picnic fare prepared by Lisa Dupar Catering of Redmond, Wash. Lisa Dupar has volunteered her time to the Auction in several ways over the past few years, including preparing a course for the Gala Auction. This will be her first year to cater PICNIC, and she's planning some mouth-watering mouth·wa·ter·ing or mouth-wa·ter·ing adj. Appealing to the sense of taste; appetizing: the mouthwatering aroma of a baking pie. Adj. 1. fare. The menu includes Fennel fennel, common name for several perennial herbs, genus Foeniculum vulgare of the family Umbelliferae (parsley family), related to dill. The strawlike foliage and the seeds are licorice-scented and are used (especially in Italian cooking) for flavoring. Seed Crusted Salmon Sandwiches on Jim's Caramelized Onion Rolls, and for dessert, a variety of gourmet ice cream sandwiches made with pastry chef Jim Brinkley's signature Coconut Cookies and Mexican Chocolate Brownies. Dupar is pleased to participate in the Auction of Washington Wines for the opportunity to support Children's Hospital and Regional Medical Center. "We're so lucky to have Children's Hospital in our city," says Dupar. "I know at least four children personally whose lives have been saved there -- it's an incredible place, and I want to do whatever I can to support the work that goes on there.
