APRICOT NUT BREAD 1 cup dried apricots, diced 2 eggs 4 tablespoons butter, melted 4 cups flour, sifted 6 teaspoons baking powder 1/2 teaspoon soda 1 1/2 teaspoons sail 1 cup orange juice, strained 1/2 cup water 2 teaspoons vanilla 2 cups pecan or walnut/pieces, broken Soak, drain, and grind apricots in a food processor. Beat eggs; stir in sugar and butter. Mix well. Sift flour with baking powder, soda, and salt. Add flour mixture alternately with juice and water to sugar mixture. Add apricots, vanilla, and nuts. Mix well. Bake in a loaf pan at 350 degrees for 45-50 minutes or until firm when tested. Yield: 2 loaves.
