Antimicrobial interventions.

Researchers are attempting to determine the ability of current beef processing antimicrobial interventions to reduce levels of multidrug-resistant and non-multidrug-resistant Salmonella on beef carcasses.

Bovine cutaneous cutaneous /cu·ta·ne·ous/ (ku-ta´ne-us) pertaining to the skin.

cu·ta·ne·ous

) pieces will be inoculated with Salmonella strains, including multidrug-resistant strains and non-multidrug-resistant strains of both S. newport and S. typhimurium. Spray-washing of the cutaneous trunci to test a multitude of interventions will take place inside a biological safety cabinet. Scientists will test the traditional antimicrobial intervention washes, hot water and organic acids, along with some more recently developed potential interventions for carcass washing--electrolyzed water and ozone, among others. Investigators will enumerate To count or list one by one. For example, an enumerated data type defines a list of all possible values for a variable, and no other value can then be placed into it. See device enumeration and ENUM.  Salmonella before and after the antimicrobial intervention treatments are applied.
