The California Avocado Commission projects Cinco de Mayo Cinco de Mayo

Mexican holiday commemorating the Mexican victory over the French at Puebla in 1862. The French army, better-equipped and far larger than the Mexican army, had been sent by Napoleon III to conquer Mexico.
 will mark the largest consumption day of the year for avocados with consumers feasting on a record 27 million pounds or 54 million avocados, mostly in the form of guacamole.

As America's most popular Mexican holiday, Cinco de Mayo is celebrated with festive food, and guacamole is at the top of the menu. In celebration of America's love for guacamole, the California Avocado Commission has developed Cinco de Mayo Guacamole.

This traditional version calls for coarsely chopped and authentic ingredients: California avocados, lime juice, tomato, green onion, cilantro and serrano chile (a small slightly pointed chile known for its very hot, savory flavor).

"Avocado consumption is at a record high and Cinco de Mayo is the biggest day of the year for us," said Michelle Spelman, communications director for the commission. "Our growers plan for the holiday every year and harvest to insure there are plenty of avocados available for those festivities fes·tiv·i·ty

While guacamole is the most popular method of preparing avocados, other traditional dishes include California Avocado Tortilla Soup -- a savory tomato broth topped with California avocados. Additional guacamole recipes and numerous Mexican dishes are featured on the California Avocado Commission Web site at www.avocado.org so revelers can add an authentic flair to their own Cinco de Mayo parties.

The California Avocado Commission was created in 1977 to conduct market-development activities and increase overall awareness for California avocados on behalf of the state's 6,000 avocado growers.

Cinco De Mayo Guacamole

(Makes 12 servings)

2 ripe California avocados, seeded and peeled

1 Tablespoon fresh lime juice

1/3 cup diced tomato, seeded and well drained

1/4 cup chopped green onion

2 serrano chiles, chopped

1/4 cup cilantro, chopped

1/2 teaspoon salt

Preparation:

Cut avocados into 1/2 inch cubes. Stir in lime juice. Fold in remaining ingredients. Guacamole is best made as close to serving as possible. For short-term storage, seal in Verb 1. seal in - close with or as if with a tight seal; "This vacuum pack locks in the flavor!"

California Avocado Tortilla Soup

(Makes 8 servings)

1/2 bunch cilantro, leaves only

3 cloves garlic, finely chopped

1/2 teaspoon salt

1/2 teaspoon ground black pepper

2 ripe California Avocados seeded, peeled and cubed

(reserve 18 cubes for garnish)

12 corn tortilla chips, crumbled

In large pan combine chicken broth, soup, cilantro, garlic, salt and pepper
