Alsatian variation of pizza gets a boost.


Dr. Oetker Dr. Oetker is a German company that produces baking powder, cake mixes, frozen pizza and pudding.

Also included in the portfolio: a successful maritime freight business, a bank, a publishing company, an insurance outfit and a brewery.
 of Bielefeld, Germany (Fax: +49 521-155-3030), has announced a special promotion for its Bistro Flammkuchen, a pizza-like frozen Alsatian specialty that is doing very well on the domestic market. Anyone who buys three of them gets a special wooden board at the retail checkout counter.

The board is round with a handle, bears the Oetker logo and permits the product to be presented as it would be served in French restaurants. Flammkuchen differs from pizza mainly in the topping. Its crisp base is topped with ham, onions and mild creme fraiche crème fraîche

Cream that has been slightly fermented and thickened with lactic acid, often used as a topping or an ingredient in sauces.

. The Oetker product is also round like a pizza, which sets it apart from those of competitors, and those served in Alsace. Flammkuchen is traditionally rectangular rec·tan·gu·lar
