DRESSED TO KILL
Hey. What's the big fuss? It's just salad dressing. So what if I use regular? A little bit won't kill me.
Two tablespoons of most regular dressings contain anywhere from 11 grams (Thousand Island) to 16 grams (blue cheese) of fat. That's about a fifth of your daily fat allowance (the "Daily Value" that appears on all new food labels).
If that doesn't impress you, consider this: the average 19to 50-year-old woman gets more of her fat from salad dressing than from any other single food.
To cut the grease, ignore any dressing with more than three grams of fat in a twotablespoon serving. (Old labels use one tablespoon--watch out.) You can forget the "lites" and "reduced calories," too.
Those claims just mean that the dressing has at least a third fewer calories or a third less fat than the regular version. That's a step in the right direction, but it doesn't mean they're low in fat or calories.
Ken's Steak House steak house or steak·house
A restaurant that specializes in beefsteak dishes. Lite Honey Mustard dressing, for example, has ten grams of fat. That may be less than Ken's regular Honey Mustard, but it's more than Lawry's regular Golden Dijon (four grams) or Henri's regular Honey Mustard (six grams).
Salt is a cheap way to add flavor, and about half of all no-or low-fat dressings had more than our limit of 200 mg per serving. Seven Seas Creamy Italian Reduced Calorie and Wish-Bone Lite Italian each hit the scales at around 500 mg. Kraft Deliciously Right Caesar tips 'em at 560 mg--almost a quarter of your daily sodium quota.
Yet some manage to cut the salt. How? The best-tasting use vinegar and herbs. The worst use sugar or "flavor enhancers" like disodium guanylate Disodium guanylate (E627), also known as sodium 5'-guanylate and disodium 5'-guanylate, is the disodium salt of the flavor enhancer guanosine monophosphate (GMP). or MSG MSG: see glutamic acid. .
