The LIN-IS injects liquid nitrogen directly into the mixing or forming process, ensuring rapid cooling. Unlike previous cooling techniques--including the addition of frozen meat and the use of surface coolants--LIN-IS gives the user precise temperature control. Using a unique software controlled solution to automatically adapt the cooling duty to changing process parameters, the LIN-IS determines the optimum quantity of liquid nitrogen that should be injected from below, directly into the food product. By significantly reducing fat breakdown and bacterial growth, improving the regularity of meat cuts and enhancing appearance by avoiding the formation of metamyoglobin (which results from excessive exposure to oxygen in the air), manufacturers can achieve the ideal size and texture needed for further processing.
