Glenn Lewis of Winnetka regales us with his own recipe variations and edicts in a five-page letter on chicken soup and cooking in general.

Like many experts, Lewis, who says he learned of the goodness of chicken soup during the Depression, cautions that the best is made with ``an aged, fat, and fresh-killed hen whose egg-laying days are over. That is: The bird has gone through `the change of life,' and is so tough that it must be boiled for four hours on the back of a wood-burning stove in order to get a fork in it without bending the tines.''

Jessica Turchin, 5, of Woodland Hills, points to Weiler's Deli in Tarzana as the best, but it's ``second to her Grandma Mary's homemade soup,'' writes Jessica's mom, Judy Altsman Turchin.

Kindly reader Bogatz invited us over ``to try it out.''

``Just give me three days' notice,'' he asks, ``as she takes two days to make it.''
