AND THEY EAT WELL, TOO.Byline: Fred Shuster Staff Writer Sesame-crusted salmon, beef tenderloin and gold-dusted chocolate Oscar trophies have starring roles at the elegant Governors Ball, the official after-party of the Academy Awards. The dinner for 1,650 Oscar winners, nominees, presenters and performers takes place March 24 at the Grand Ballroom of the Hollywood & Highland complex where the 74th annual movie awards will be presented at the Kodak Theatre, Oscar's new home. The multicourse sit-down meal, created by celebrity chef Wolfgang Puck and his team, opens with a chorus line of hors d'oeuvres, including spicy tuna tartare

n. A rich sauce of crushed garlic, egg yolks, lemon juice, and olive oil. A trio of colorful salads follows - goat cheese, roasted beets, blood orange and asparagus; marinated lobster with ginger vinaigrette; and smoked salmon with Beluga caviar Noun 1. beluga caviar - roe of beluga sturgeon usually from Russia; highly valued Acipenser huso, beluga, hausen, white sturgeon - valuable source of caviar and isinglass; found in Black and Caspian seas on brioche. Then comes the entree. The salmon is accompanied by celery root puree while the beef is roasted and joined on the plate by stir-fried vegetables and wasabi sauce. For dessert, an apricot-and-milk chocolate dome topped with a gold- dusted chocolate mini-Oscar and film spool. Three state-of-the-art kitchens at the venue were custom-designed and created by Puck's company with the Governors Ball in mind. ``It's almost as if you took Spago Beverly Hills and recreated it on a larger scale with a bigger version of everything to accommodate the volume,'' said Carl Schuster, president of Wolfgang Puck Catering and Events. ``Even the smoker for the salmon and sturgeon looks like something out of a jet-propulsion laboratory.'' Despite the sparkling new ballroom, the number of post-Oscar dinner guests remains roughly the same as previous years when the event was held in a tent in the parking lot of the Shrine Auditorium.
