ADVISORY/Johnson & Wales University Calls for Entries In Fourth Annual Bacardi Recipe Classic; $27,000 in Cash Prizes to be Awarded to Culinary Professionals.

Food creations that illustrate the versatility of BACARDI U.S.A. rums will vie for $27,000 in cash prizes - with the Best of Show winning $10,000 - when Johnson & Wales Wales, Welsh Cymru, western peninsula and political division (principality) of Great Britain (1991 pop. 2,798,200), 8,016 sq mi (20,761 sq km), west of England; politically united with England since 1536. The capital is Cardiff.  University hosts the Fourth Annual BACARDI Recipe Classic on Saturday, September 29th in Charleston, S.C. Deadline for submissions is August 15, 2001.

The contest is open to professional chefs, educators, and members of the foodservice industry. Entrants must be at least 21 years old to enter; Johnson & Wales University students and employees are not eligible.

"The contest has proved to be an enormous success, with entries from culinarians nationwide," said Thomas L. Wright, senior vice president of Development for Johnson & Wales. "The caliber of the recipes and the way in which they showcased the exquisite flavors of BACARDI U.S.A. rums made for an exciting event."

Entrants are required to submit recipes that feature one of the following BACARDI U.S.A. rum rum, spirituous liquor made from fermented sugarcane products. Prepared by fermentation, distillation, and aging, it is made from the molasses and foam that rise to the top of boiled sugarcane juice.  products: BACARDI Light-Dry; BACARDI Gold; BACARDI Spice; BACARDI Select; BACARDI 151; or BACARDI Limon. While entries will be placed in two categories - hot or cold appetizers or entrees; or hot or cold plated desserts - applicants may submit only one recipe per category. All recipes must be original and should appeal to the home-cooking enthusiast A person who enjoys using computers and electronic equipment. Enthusiasts like technology and are willing to learn more of the ins and outs of a product than the average consumer, who just wants to use it. An enthusiast is more like a "prosumer." Recipes must be for 10 portions. Listing the ingredients in sequence of use, weight, (MORE) measure, method of preparation and amount of time needed to prepare and cook. A 4x6' color, head-and-shoulders photograph of the entrant en·trant

First runners-up in each of the two categories will receive $5,000, and seven finalists will receive $1,000 each.
