A tasty win for an Iowa chef and IPPA.


The Iowa Pork Taste of Elegance once again brought together Iowa's top chefs for the annual culinary competition. The checkoff-funded event, sponsored by the Iowa Pork Producers Association, is designed to inspire chefs to create new and exciting ways to menu pork. Chef Shad shad, fish, Alosa sapidissima, of the family Clupeidae (herring family), found along the Atlantic coast from Newfoundland to Florida and successfully introduced on the Pacific coast. The shad is one of the largest (6 lb/2.7 kg average) of the herrings and has delicious but bony flesh; its roe is valued as a delicacy. Shad ascend rivers to spawn in the spring; water pollution and indiscriminate netting have cut down their numbers. Kirton of the Hotel Pattee in Perry, Iowa, was awarded first-place honors; he also took home the People's Choice Award.  Restaurant and Foodservice Committee. "With more consumers eating out, menuing pork entrees in popular restaurants is a top priority for IPPA restaurant and foodservice programs." Honors were awarded on taste, appearance and originality by a panel of Des Moines area judges. Winner Chef Kirton will be invited to the National Taste of Elegance competition later this spring.

2003 Iowa Pork Queen Beth Kulow presented Chef Shad Kirton with Chef Par Excellence during the 18th Annual Taste of Elegance. Seven restaurants from the state of Iowa competed in the 2004 competition, with each chef preparing an original entree using a fresh pork cut.
