A sensitive catalatic activity method has been established for verifying the adequacy of heat-treating chicken meat.A sensitive catalatic activity method has been established for verifying the adequacy of heat-treating chicken meat at 71.1 C to destroy harmful bacteria. Under uniform conditions, the technique was able to detect the changes in the catalatic activity within 0.5 C between 69 C and 71 C.
