HERBED POTATO CAKES
7 pound Idaho potatoes, peeled and grated
1/2 large onion, grated
1 large egg
1 tablespoon fresh parsley, chopped
1 tablespoon fresh basil, chopped
1 teaspoon fresh rosemary,, minced (do not substitute
dried herbs)
1/4 teaspoon salt
Pinch of freshly ground black pepper
3 tablespoons vegetable oil or clarified butter (more if
needed)
Sour cream (for garnish)
Mix all ingredients except oil or butter.
Shape potato mixture into small patties about
1 1/2 inches in diameter. Fry until golden brown
in hot oil or butter. Serve warm, topped with
small dollop sour cream and minced parsley
garnish.
Yield: 24 small patties; or to accompany a
dinner entree, make larger ones
SAUSAGE AND SPINACH SQUARES
2 packages refrigerated crescent rolls
1 pound hot sausage, browned drained and crumbled
10 ounces frozen chopped spinach, thawed and drained
well (press between paper towels)
1 (8 ounce) package cream cheese, softened
1 cup Parmesan cheese, grated
1 large egg beaten
Dash of Worcestershire sauce
Mix all ingredients except rolls. Spray a
9" x 13" ovenproof dish with non-stick cooking
spray. Unroll one package of crescent rolls and
press into dish: Spread filling mixture evenly
over dough. Roll out remaining dough, and top
mixture, covering to edge of dish. Bake 20-25
minutes at 350 degrees. Cool slightly, cut into
squares, serve warm.
Yield: 24 squares
[ILLUSTRATION OMITTED] [ILLUSTRATION OMITTED] HOT PECAN DIP 24 ounces cream cheese, softened 1 bunch green onions, chopped 1 large green bell pepper, minced 1/2 cup milk 3 small jars dried chipped beef 2 cups toasted pecans, chopped Soak dried beef in water for about 30 minutes to draw out excess salt. Drain and chop. Mix all ingredients except toasted pecans. Spread in a 9" x 13" ovenproof baking dish. Top with pecans, bake at 350 degrees for 25 minutes.
