A LA CARTE : TOP GROSSERS.

Byline: Larry Lipson

The restaurants that ring up the most at the cash register may not be the most profitable or the most popular.

But the highest numbers certainly indicate a type of mass appeal that suggests commercial success.

Thanks to the Los Angeles Los Angeles (lôs ăn`jələs, lŏs, ăn`jəlēz'), city (1990 pop. 3,485,398), seat of Los Angeles co., S Calif.; inc. 1850.  Business Journal, which lately has been paying increased attention to the restaurant industry, we discover that of the top 20 grossers in L.A. County, only the Ivy and L'Orangerie made the top 20 in popularity in the annual Zagat survey Zagat Survey (pronounced za-GAT)[1] was established by Tim and Nina Zagat in 1979 as a way to collect and correlate the ratings of restaurants by diners. However, the Cheesecake Factory, undoubtedly one of the top moneymakers in town and listed as No. 12 in popularity in the Zagat guide, is not on the top-grossing list because it doesn't break out figures for its separate locations. Neither do Planet Hollywood and some other chains.

Also, there are several popular independent restaurants that prefer not to disclose their gross sales Gross Sales
