A LA CARTE : FLORIDA STONE CRABS.

In Miami Beach Miami Beach, city (1990 pop. 92,639), Dade co., SE Fla., on an island between Biscayne Bay and the Atlantic Ocean; inc. 1915. It is connected to Miami by four causeways.  at Joe's, one of America's most famous restaurants, patient diners wait up to three hours for a table in order to pick away and savor the delicate, sweet meat of Florida's stone crab claws.

 of the lost claws. In season now, the stone crab legs may be found in a handful of local restaurants.

The cost is high, the demand is great and Joe's purchases most of the catch.

Consequently, Los Angeles-area kitchens cannot stock them in large quantities. So it makes sense to check first before making a special restaurant visit.

When fresh, they're best served cracked on ice with sauce. When frozen, they seem to taste better steamed and served warm.

Brandywine

How served: Available as an appetizer, the cracked claws, approximately a half-pound per serving (three to five claws) are chilled on ice and brought with mustard-horseradish dressing.

How served: The cracked Florida stone crab The Florida stone crab, Menippe mercenaria, is a crab found in the western North Atlantic, from North Carolina to Belize, including Texas, the Gulf of Mexico, Cuba and the Bahamas that is widely caught for food.  claws, weighing a half-pound per serving, translates into three to five claws. They arrive handsomely presented on ice with cocktail sauce.
