The race to market Copper River King and sockeye salmon sockeye salmon
 or red salmon

Food fish (Oncorhynchus nerka) of the North Pacific that constitutes almost 20% of the commercial fishery of Pacific salmon. It weighs about 6 lbs (3 kg) and lacks distinct spots on the body.
 across the country kicked off in mid-May in Alaska.

The prized king-size fish, averaging 26 pounds each and rich in omega-3 oils, and their less expensive brethren are now appearing on local restaurant plates and will be around until mid-June.

Here are a few restaurants with Copper River salmon dishes worth consideration:

Brandywine

Dish description(s): Grilled Copper River King salmon filet on a mixed vegetable bed with orange-basil butter sauce, and a seared version on roasted vegetables with tomato tarragon sauce are main menu items. Off-menu specials are seared salmon in a mustard seed crust atop grilled vegetables with garlic mashed potatoes and a white wine lobster sauce, and a baked rendition. This comes in a horseradish crust, stuffed with Dungeness crab meat, perched atop wild mushroom ravioli, served with sauteed spinach and roasted garlic sauce.

It belongs to the family Rosaceae (rose family) and is probably indigenous to China.  salsa and plum wine sauce.
