A LA CARTE : CHRISTMAS DAY DINING.

Most restaurants close on Christmas Day to give their employees the day at home with their families.

But there are exceptions; in the main, they those few restaurants that pride themselves on never closing - and hotels. The latter have to offer food service to their guests anyway, so generally they keep at least one dining facility on the premises open and are quick to pile food onto their buffet tables.

So, for those looking for a Christmas Day meal, here are a few worth consideration:

Cafe Sierra

Address: Universal City Hilton & Towers, 555 Universal Terrace Parkway, Universal City.

When: Noon to 8 p.m.

Menu information: All-you-can-eat buffet billed for both Christmas and Hanukkah featuring free-range turkey, roasted duck, leg of lamb, carved bone-in ham, pumpkin soup, cranberry-ginger relish, cream cheese mashed potatoes, sweet potatoes, cornbread, vegetables, shrimp cocktail, king crab legs, dim sum, calamari, tempura, Mandarin barbecued chicken, spicy scallops, pineapple fried rice, cherries jubilee, apple cobbler, pastries, cakes, tortes.

Price: $29. Children under 12 $14.

City Grill

Address: Omni Los Angeles Hotel & Centre, 930 Wilshire Blvd., Los Angeles.

Menu information: Buffet features pumpkin cream soup, salad bar, herb-crusted prime rib of beef, roast tom turkey, chestnut stuffing, giblet gravy, cranberry relish, glazed sweet potatoes, broccoli, grilled salmon with mandarin orange mousseline mousse·line

Menu information: Buffet displays hot and cold appetizers, entrees and assorted desserts including a yule log. Look for lobster and crayfish crayfish or crawfish, freshwater crustacean smaller than but structurally very similar to its marine relative the lobster, and found in ponds and streams in most parts of the world except Africa. Pangaea/Hana Lounge

When: 11 a.m. to 3:30 p.m..

Menu information: Santa Claus will serve hot apple cider during this holiday brunch buffet while a jazz quintet plays Christmas songs. Buffet features carved-to-order prime rib with mushroom au jus, maple-glazed ham, roast breast of turkey with sage gravy, also butternut squash ravioli with toasted pecans and sage butter, steamed asparagus with citrus hollandaise, wild rice with bay scallops, grilled breast of duck with lentils, sweet potato gnocchi gnoc·chi

Menu information: Promenade's brunch buffet features assorted pastries, egg and omelette specialties, waffles, desserts, assorted juices. Its dinner menu includes roast turkey or prime rib meals with soup or salad, rolls, dessert, coffee or tea. Chelsea's meal begins with grilled polenta po·len·ta
