Ching holds a master's degree in business administration from the University of California, Los Angeles UCLA comprises the College of Letters and Science (the primary undergraduate college), seven professional schools, and five professional Health Science schools. Since 2001, UCLA has enrolled over 33,000 total students, and that number is steadily rising.  and earned her bachelor's degree in civil engineering from Stanford University.

Ching joined A&B in 1982 and was promoted to vice president, corporate natural resources in 1988. She has retained responsibilities related to the company's natural resource assets since then. Three years later, she added government affairs to her responsibilities and, in 1992, Ching was also given the corporation's community relations functions. Prior to joining A&B, she was a financial analyst for Dillingham Corporation.

Ching has held numerous community and professional leadership positions, and is a board officer for the Hawaii Nature Center; a board member and past president of the Land Use Research Foundation; a board member and past president of the Hawaii Resort Developers Conference; and a member of the Urban Land Institute Hawaii District Council's Executive Committee.

Her community involvement currently includes the boards of the Hawaii Nature Center, Nature Conservancy of Hawaii, YMCA YMCA
