18 L.A.-AREA RESTAURANTS GET MICHELIN STARS.

Considered by many to be the Oscars of the restaurant world, the star selections are determined by anonymous evaluations by professional, trained inspectors (Michelin employees with all their bills paid by Michelin).

There were no three stars (the top rating, which denotes exceptional cuisine, worth a special journey) awarded to any restaurant in the area, but a trio of restaurants each received two stars (excellent cooking, worth a detour) -- Spago, Beverly Hills Beverly Hills, city (1990 pop. 31,971), Los Angeles co., S Calif., completely surrounded by the city of Los Angeles; inc. 1914. The largely residential city is home to many motion-picture and television personalities. ; Urasawa, Beverly Hills; and Melisse, Santa Monica Santa Monica (săn`tə mŏn`ĭkə), city (1990 pop. 86,905), Los Angeles co., S Calif., on Santa Monica Bay; inc. 1886. Tourism and retailing are important, and the city has motion-picture, biotechnology, and software industries. .

Two Valley restaurants -- Asanebo, Studio City; and Saddle Peak Lodge, Calabasas; were among the 15 L.A.-area restaurants that were awarded one Michelin star (a very good restaurant in its category).

The Los Angeles guide includes a total of 263 restaurants representing 29 types of cuisine -- and 27 hotels (among them Four Seasons Westlake Village). Thirty-five restaurants have been earmarked by inspectors as a place to eat for less then $25, including Banzi Sushi, Calabasas.

The Michelin Guide Las Vegas Las Vegas (läs vā`gəs), city (1990 pop. 258,295), seat of Clark co., S Nev.; inc. 1911. It is the largest city in Nevada and the center of one of the fastest-growing urban areas in the United States.  2008 ($12.95) also debuts in bookstores Friday. Joel Robuchon, in the MGM MGM

U.S. corporation and film studio. It was formed when the film distributor Marcus Loew, who bought Metro Pictures in 1920, merged it with the Goldwyn production company in 1924 and with Louis B. Mayer Pictures in 1925.
 Grand hotel, garnered three stars. Two stars were awarded to three restaurants -- Alex, Wynn hotel; Guy Savoy, Caesars Palace hotel; and Picasso, Bellagio hotel. Of the 127 Las Vegas restaurants included in the guide, 12 received one star.

The stars -- in all the 17 Michelin Guides throughout Europe and this country -- judge only what is on the plate -- the food/cuisine -- which includes the quality of the products, the mastering of flavors and cooking, personality of the cuisine, value for the money and the consistency of the restaurant offerings. Decor, ambience, service, comfort level, etc. are rated separately and designated by different symbols -- couverts.

Unlike other guidebooks, Michelin includes a highly selective collection of the best-rated restaurants at various price points and comfort levels in a region.
